How To Build A Mini Wine Cellar

Anyone passionate about wine usually starts to collect it and as their wine collection grows they must begin looking for a place to store a wine collection.

A cupboard can readily be converted into a mini wine cellar to store a growing wine collection.

Before you begin building your mini wine closet consider the position of the closet in relation to the rest of the house or apartment.

Try not to convert a closet against an outside wall into your new wine cellar. From season to season the other walls of your home may be subject to wide temperature fluctuations. If at all possible, choose an internal closet where the temperature is likely to remain more constant.

The speed and degree of any temperature changes are critical in successfully storing and aging wine. A gradual change of a few degrees between from winter to summer won’t matter. A similar change each day will certainly cause harm to your wines by ageing them too quickly.

The number one rule when you are storing wine is to avoid large temperature fluctuations. Damage of this type will be evident immediately from the stickiness that often forms around the capsule. Over time the continual expansion and contraction of the wine will damage the integrity of the cork. It’s just like having the cork removed and replaced every day. When this happens, minute quantities of wine may be pushed out along the edge of the cork (between the cork and the bottle neck) allowing air to seep back in. Once air has come in contact with the wine the irreversible process of oxidation starts and your wine will be ruined.

At 55ºF to 58ºF the wine will age slowly, enabling it to develop fully as intended by the winemaker. Higher temperatures will age wine more rapidly and cooler temperatures will slow down the ageing process. The damage done to your wine will be irreversible if it is stored at a temperature above 82ºF for even a month.

Maybe the hardest part of building a wine cellar closet is finding other locations to store what is already in the closet!! Do not hesitate now … remove all the present contents (move them elsewhere / give away / auction them) and start out with an empty closet!

Wine racks can be purchased quite inexpensively from a hardware store, online retailer or storage shop and you’ll have a simple but very effective mini wine cellar.

Wine rack designs vary in bottle density; price variations have more to do with aesthetics than efficiency.

Individual racks makes it easy to select bottles. If you place racks against only one wall of the closet you should still have space available on the floor or shelves to store wines purchased by the case … these wines should remain strored in their cartons.

Turtle Cheesecake:Adults Only

I grew up a bit differently from most children.  I preferred meat, fruit and even some vegetables to desserts.  I know that might sound a bit strange to most parents.  My preferences might have been related to the fact that my mother fed me baby foods until I was about twenty-eight.  As I think about it, the folks at Gerber didn’t produce a pureed version of German chocolate cake.

I also ate very little candy.  On Halloween, I would come home from trick or treat, and  my mother and I would sit on the floor sorting my take for the evening.  We would sort them into three piles.  Into one of those piles would go everything that was made by the generous Mrs. Robertson.  Immediately after sorting, that pile went straight into our garbage can.  My mother was sure that Mrs. Robertson let her eighty four cats walk all over the counters in her kitchen at will.  My mother knew this because Mrs. Robertson’s sister-in-law had told her this (both the number of cats and the freedom that those felines were given.)  The pile next to the toxic contributions of Mrs. Robertson was made up of any apples and small boxes of raisins that I had been given.  The apples were always provided by the two dentists who lived in our neighborhood.  That was the pile I ended the night consuming.  I was never too sure what happened to the third pile, the one that had candy of every sort imaginable and popcorn balls.  As soon as the sorting was finished, my mom hastily took those into my parent’s bedroom.  They never again appeared.  The only time I ever was allowed to have candy was when I visited one pair of grandparents.  (My other grandparents only tried to give me buttermilk.  I resent cows to this day.)

In defense of my mother, I believe that this sort of behavior is taught in the top secret motherhood school.  I noticed that when my son was growing up, his mother hid all his candy after Halloween, too.  However my wife has never revealed the exact curriculum of this top secret school.

At twenty-nine, just as I was beginning to learn that meat, vegetables and applesauce do not have identical textures in their natural states, I discovered dessert in the form of a gourmet cheesecake.  Actually, I now know that the word gourmet is rarely applied to anything that comes from the discount grocery store in an ugly box with a small cellophane peep hold.  The cheesecake turned out to be mostly chemicals–delicious chemicals.  Remember that my taste buds had been accustomed to the miracle recipes of the baby food makers.  To me, the cheesecake was the definition of heaven.

Some years later, as I went through my gastronomical adolescence, my recreational use of foods helped me to realize that cheesecake didn’t really taste like cardboard, as my first experience had led me to believe.  I also discovered that cheesecake can come in a variety of flavors besides blueberry.

Dessert is now my favorite time of day. The best way to top off a well balanced meal of two jars of meat, three jars of thoroughly squashed squash and a banana is with a slice of turtle cheesecake.  But please don’t tell my mother; she’ll just take it from me.

Unfortunately, I don’t have the foggiest notion of how to go about actually making a cheesecake.  If you have a recipe for one that doesn’t involve using either a mixer or an oven, please let me know.  I do know how to use a blender, though, because I watched my mom prepare the Thanksgiving turkey one year.

Author’s notation:  I may have taken some creative liberties with slight exaggerations here and there, but I’m not concerned about being caught.  My mother is still not sure what the Internet is.
